Lavashak - Iranian Sour Plum Fruit Roll/Leather


Lavashak is beautiful. Sour plum boiled down and dried.
These are a staple Iranian snack...

These are easy to make as they are self-maintaining

Ingredients: 

  • As many Plums as you want
  • A small amount of oil for greasing

Directions:


1. Rinse the plums and de-stone, leaving the skin on.

2. Place in a pot without water to boil on medi

3. Remove the pot from the heat when the plums have broken down and the skin has come off.

4. Place a strainer over another pot and strain the plums. You want the pulp and skin in the strainer and liquid in the new pot.

5. Blend the pulp and skin in a food processor until there is no more skin visible.

6. Add the blended mixture to the pot and return onto the hob on an medium heat 

7.Once the mixture has been thickened to a cake mixture consistency, Remove from heat.

8.Grease a dish and pour the lavashak onto the dish, spread until the thickness is about 4 mm

9. Leave to dry under sunlight for 2-4 days

10. Cut into strips and enjoy.
